American Pancakes

Ingredients
- 200ml milk
- 250g self-raising flour how to?
- 3 eggs
- 1 tsp baking powder
- 1 tbsp light brown sugar how to?
- 30g butter
- oil, for greasing
Method
Soften butter in a microwave until it just starts to melt. Lightly warm up the milk until it’s lukewarm.
Put the eggs into a jug or large mixing bowl, add sugar, butter and milk and blend it all using an electric hand blender or mix on fast speed using a hand mixer.
Gradually add the flour with baking powder and blend thoroughly so that there are no lumps.
Let the pancake dough rest at room temperature for a few minutes and mix through just before using.
Heat the pancake pan over medium heat (induction hob-set 7) and coat lightly with oil.
Carefully pour a portion of the pancake mixture into the pan.
Fry the pancakes in portions of 3 at a time so they do not stick together and fry evenly.
Once the pancakes have risen a bit and the top becomes solid, flip them over using a spatula.
Fry for a moment until the bottom is light brown then flip them back on the right side.
Remove the pancakes from the pan and repeat with the remaining batter.
It is enough to grease the pan once at the beginning of frying. The butter contained in the dough shall prevent the pancakes from sticking to the pan.
Serve the pancakes as you desire.
My family prefers jam, maple sauce, golden syrup, fruits, chocolate, or icing sugar.
