Ingredients
- 1 long cucumber
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp chilli flakes
- 1 garlic clove
- 1 tbsp sesame seeds
- a pinch of salt
- a pinch of ground ginger
- a few sprigs of spring onion, green parts
Method

In a dry pan, toast the sesame seeds to enhance their flavour.
Wash the cucumber and cut it into thin slices.

Peel and mince the garlic.
Place the cucumber in a bowl, add a pinch of salt and garlic, and mix.
Pour in the soy sauce, sesame oil, a pinch of ginger, a pinch of chilli flakes, and sesame seeds.
Cut the green part of the spring onion and add it to the bowl.
Mix all together once again.
