Ingredients
- 150–200 g hot smoked salmon
- 1 large romaine lettuce
- 8 mini tomatoes
- 2 eggs
- 20g-30g Parmesan cheese
- a pinch of black pepper
- a pinch of fresh parleys
- lemon
- Caesar Salad Dressing
Method

Start by making Caesar Salad Dressing according to the recipe. Make half of the recipe for 2 portions.
Add the eggs to a pan and cover with cold water.
Bring the water to the boil and then simmer over a medium heat for 6½ minutes.
Remove the eggs and transfer them to cold water to cool.
Peel gently, and the yolk should be semi-runny.
Wash and halve the tomatoes.
Wash, dry and tear the lettuce into pieces and cut the salmon into chunks.
Chop some parsley and shave some Parmesan cheese.
Cut the eggs into quarters.
Grate some lemon zest.
Assemble the salad.
Divide the lettuce between two plates and evenly add the tomatoes and salmon.
Top with the eggs and season with black pepper.
Sprinkle with the chopped parsley and Parmesan and drizzle with the Caesar dressing.
Add a bit of lemon zest at the end.
