Cajun Rice with Chicken and Spinach

Ingredients
- 200g basmati rice
- 2-3 tbsp of vegetable oil
- 1 red onion
- 1 red bell pepper
- 2 chicken breasts, 400g
- 200g baby leaves spinach
- a few tbsp of water
- 2 tsp cajun seasoning
- a pinch of salt
- a pinch of black pepper
- a handful of fresh coriander leaves
Method

Start by preparing all of your ingredients.
Clean and cut the chicken into bite-sized pieces.
Wash and cut the bell pepper into sticks.
Peel and slice the red onion.
Cook the rice in lightly salted water according to the instructions on the package. Drain and set aside.

In a deep pan, heat some oil and fry the chicken until golden brown and cooked through, for about 6-8 minutes, stirring occasionally.
Remove the chicken from the pan into a bowl and set aside for later.

Reuse the same deep pan to add some more oil and fry the red onion and pepper for a few minutes (2-3), stirring frequently.

Then, add the spinach along with a few tablespoons of water.
Cook for another 2-3 minutes, stirring until the spinach wilts.
Add the Cajun seasoning, a pinch of salt, and pepper.

Finally, mix in the fried chicken and combine everything.

Add the rice to the pan and warm everything through, mixing well.

Chop some fresh coriander and sprinkle it over your dish.
Serve and enjoy!
