Here is my recipe for Candied Fruit Cake, also known in Poland as Keks. It is a delicate, flavorful cake made with a lot of dried fruit and is nut-free. It is typically baked for Christmas.

Ingredients

  • 330g self-raising flour how to?
  • 2 tsp baking powder
  • 200g crystallised candied fruits
  • 50g raisins
  • 200g soft-spread butter
  • 100g icing sugar how to?
  • 2 tsp vanilla sugar
  • 5 eggs
  • 50g sour cream what is?

For icing 

  • 2 heaped tbsp icing sugar how to?
  • 2 tsp of lemon juice
  • a few tsp of water

Preheat the oven to 175C and prepare the loaf baking tray with baking parchment.

Place candied fruits, raisins and 2 spoons of flour into a mixing bowl and mix.

Leave some fruits and raisins for decoration at the end.

Sift the rest of the flour with baking powder and add to the bowl. Using a spoon mix it all together.

In another bowl beat the butter with icing sugar and vanilla sugar using the mixer at high speed for about 5 minutes, until you get a fluffy mass.

Butter and eggs shall be at room temperature.

Add eggs, one at a time, and mix well between each addition.

When eggs are combined with the mixture, add the sour cream and mix with the spoon.

Add fruits-flour mix to your mixture and mix gently with a spoon.

Once all nicely combined pour the batter into a tray and bake for about 50 to 60 minutes until the skewer inserted into the middle of the cake comes out clean.

Let the cake rest and cool down properly in a tin.

Once the cake is cooled down, it’s time to prepare the icing.

Combine icing sugar with lemon juice and a few teaspoons of water.

Stir until the consistency of the cream is achieved.

Put your icing into the piping bag and decorate the cake.

Finish with remaining raisins and candied fruits.

It’s time to take out the cake from the tin and cut some slices.
