Ingredients

  • 100g couscous 
  • 200g of plum tomatoes, quartered
  • 30g pumpkin seeds
  • 50g raisins 
  • 50g baby leaf and herb salad 
  • 1 tin of Chickpeas in water, drained 
  • 2 tbsp of chilli-infused olive oil
  • 1 tsp of cajun seasoning 
  • 1 tsp of butter
  • salt, for taste
  • black pepper, for taste

Method

Place couscous in a heatproof bowl. Add cajun and butter.

Pour boiling water (4 parts couscous per 5 parts of water), cover and leave for about 8 minutes. Stir well at the beginning and halfway through with a wooden spoon allowing everything to dissolve and combine.

Once done, leave to cool down.

In a meantime prepare all ingredients for a salad.  

Once the couscous is cooled, place all salad ingredients into a mixing bowl, and stir gently.

Pour olive oil, season with salt and pepper and your salad is ready!

Keep refrigerated until served.
