Ingredients
- 3 chicken breast, 750g
- 3 garlic cloves
- 40g Parmesan cheese
- 40g butter
- 200g fresh spinach
- a pinch of salt
- a pinch of black pepper
- 250ml double cream
Method

Prepare the chicken: Pat the chicken breasts dry with kitchen paper, then cut them into bite-sized chunks.
Prep the aromatics: Peel and finely mince the garlic. Grate the Parmesan and divide it into two equal portions.

Wilt the spinach: Melt half of the butter in a large pan over a medium heat. Add the spinach and sauté until just wilted. Remove the spinach from the pan and set aside.

Brown the chicken: Melt the remaining butter in the same pan. Add the chicken chunks and fry for 5–6 minutes, turning occasionally, until golden brown and cooked through.
Season: Stir in the minced garlic, salt, and pepper. Toss well for a minute until the garlic is fragrant and the chicken is evenly coated.

Simmer: Pour in the double cream. Turn the heat down, cover the pan, and simmer gently for 10 minutes, stirring occasionally to ensure the sauce doesn’t catch.

Combine: Fold in half of the Parmesan and the cooked spinach. Continue to cook for a further 5 minutes to allow the flavours to meld and the sauce to thicken.

Serve: Serve immediately, garnishing with the remaining Parmesan. This dish pairs perfectly with fluffy rice, buttery mashed potatoes, or pasta.
