Ingredients
- 5 eggs
- 3 large gherkins
- 1 celery stick
- 1 tsp of Dijon mustard
- 4-5 tbsp of mayonnaise
- a few sprigs of spring onion
- a pinch of salt
- a pinch of black pepper
Method

Put the eggs into a small pan with cold water.
Cover the pan and bring it to a boil.
Remove the lid and turn the heat down so the surface barely shivers.
Cook for 8-10 minutes.
Drain and cool the eggs under running cold water (or in a large bowl of cold water).
Peel the eggs and dice them.

Chop the gherkins and celery sticks into small pieces and put them into a bowl together with the eggs.

Add the mustard and mayonnaise.
Using a spoon, mix all together.
Add a pinch of salt and black pepper and mix through.

Chop the green part of the spring onion and sprinkle it over the salad.

Enjoy with fresh bread or a baguette.
