Method
Preheat the oven to 240C.
Sift flour and place in the mixing bowl with eggs and milk.
Whisk until smooth and the ingredients are well combined.
Place a portion of oil at the bottom of the muffin tray or cupcake tray.
Put in the oven and allow to heat for approximately 5 minutes.
Give the batter a final whisk before removing the tray from the oven.
Carefully pour the batter into each tray.
Reduce oven to 220 C.
Bake for 15-20 minutes until puddings rise and become golden brown, puffed and crispy.
