Ingredients
- approx. 1.5kg medium size chicken
- 2 garlic cloves
- fresh rosemary, two sprigs
- fresh parsley, a few twigs
- 2 tbsp of runny honey
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp ground paprika
- 1 tsp turmeric
- ½ lemon
- 1 tbsp butter
If fresh rosemary and parsley are hard to find, you can easily substitute them with dried herbs.

Method
Preheat your oven to 180°C.
First up, let’s whip up a delicious marinade that will infuse your chicken with juicy goodness.
Start by zesting and mincing your garlic. Then, strip the leaves from one sprig of rosemary and chop them finely with fresh parsley.
Combine honey, salt, pepper, paprika, and turmeric in a small bowl.
Stir in the grated garlic and chopped herbs to the mixture.
Squeeze the juice of half a lemon into the mixture, stirring well to combine all ingredients.
Your marinade is all set to tenderise and flavour your chicken.
Beyond adding sweetness, the honey in the marinade acts like a magic wand, tenderising the chicken from within while coaxing a golden, crispy caramelisation on the outside.
Give the chicken a flavour massage with the marinade, ensuring every nook and cranny gets a taste of deliciousness.
Tuck a fresh sprig of rosemary and a pat of butter (about 1 tablespoon) into the chicken’s cavity.
Pop the chicken into the bag and secure it tightly.
