- 200g self-raising flour how to?
- 200g butter
- 200g caster sugar
- 4 eggs
- 1 tsp of baking powder
- 1 tbsp of fresh lemon juice
- 50g of icing sugar how to?
- a few drops of fresh lemon juice
- 1 tsp of water
Preheat the oven to 180C with a fan.
Prepare the muffin tray and cupcake cases.
Place the eggs into the mixing bowl and mix using a hand mixer for 2 minutes until light and fluffy.
Squeeze a tablespoon of lemon juice and add to the dough.
Gradually add sugar and continue mixing until sugar dissolves.
Add butter and mix until all ingredients are well combined.
Sift the flour with baking powder and add to the mixture.
Whisk further for a minute or two. Do not over-mix.
Using a spoon fill the bun cases with dough.
Bake for 20 minutes at 180C degrees until risen and nicely blushed.
Take them from the oven and let them cool down naturally. In the meantime prepare the icing.
Combine icing sugar with a few drops of lemon juice and 1 tsp of water. Stir until the consistency of a cream. Put your icing into the piping bag and decorate the cupcakes.
