Meatless Skewers with Halloumi Cheese

This easy recipe for vegetarian skewers with halloumi cheese is a delicious and meatless meal that is perfect for any occasion. The halloumi cheese adds a salty, chewy flavor to the skewers, and the vegetables add a touch of freshness.

Ingredients
- 240g of plum tomatoes
- 1 red bell pepper
- 1 yellow bell pepper
- 1 large courgette, approx. 323g
- 225g of Halloumi cheese alternative
- olive oil, for brushing
- 1 pack of Pitta bread, approx. 360g (6 in a pack)
Dip
- 200ml of Greek yoghurt
- a pinch of salt
- a pinch of black pepper
- a pinch of mixed dried herbs
- ½ lemon juice
- a pinch of dried garlic
Method
Place all dip ingredients (greek yoghurt, salt, black pepper, dried herbs, lemon juice and dried garlic) into a bowl and mix well. Set aside for later.
Heat the oven to 220C.
Prepare a baking tray and line it with aluminium foil.
Wash your vegetables and drain.
Leave the tomatoes whole and cut the peppers into pieces.
Cut the courgette using a veg peeler into thin slices.
Drain the halloumi cheese and cut it into cubes.
Stuff the pieces of vegetables and cheese on sticks, brush with olive oil and put on a baking tray.
Bake for 15 minutes turning them a couple of times through baking until halloumi cheese is nicely browned and the vegetables are tender.
In the meantime toast the pitta bread.
You can use a home toaster or put it in the oven for a while.
When skewers are ready serve with toasted pitta and the dip on a side.
