Ingredients

  • 240g of plum tomatoes
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 large courgette, approx. 323g
  • 225g of Halloumi cheese alternative
  • olive oil, for brushing
  • 1 pack of Pitta bread, approx. 360g (6 in a pack)

Dip

  • 200ml of Greek yoghurt
  • a pinch of salt
  • a pinch of black pepper
  • a pinch of mixed dried herbs
  • ½ lemon juice
  • a pinch of dried garlic

Method

Place all dip ingredients (greek yoghurt, salt, black pepper, dried herbs, lemon juice and dried garlic) into a bowl and mix well. Set aside for later.

Heat the oven to 220C.

Prepare a baking tray and line it with aluminium foil. 

Wash your vegetables and drain.

Leave the tomatoes whole and cut the peppers into pieces.

Cut the courgette using a veg peeler into thin slices.

Drain the halloumi cheese and cut it into cubes.
