Ingredients
- 250g Quark Cheese (Twaróg - assuming semi-skimmed/półtłusty)
- 250g Self-rising flour
- 3 tbsp White granulated sugar, approx. 38g
- 2 Eggs, medium-large
- 1 tsp Vanilla extract
- 1 tsp Baking powder
- 1 tbsp Vodka
- 0.5l Oil, for frying
- 2 tbsp Icing sugar, for dusting
Vodka can be replaced for Vinegar.
Method

Heat the oil in a deep pan to 160°C.

In a bowl, mix together the eggs, sugar, vanilla extract, and vodka using a hand whisk.

Add the quark cheese and continue whisking.

Add the flour sifted with the baking powder and, using a spoon, mix until all the ingredients are fully combined and a fairly sticky dough forms.

Once the oil reaches 160°C, begin frying.

Using an ice-cream scoop, form small balls of dough and carefully lower them into the hot oil.

Fry in batches for about 2–3 minutes on each side, until golden brown and cooked through.
Adding alcohol prevents the doughnuts from absorbing oil during frying, so they stay crispy and not greasy.
I managed to make 35 doughnuts, but the quantity and frying time depend on the size of the portions.

After frying, place the doughnuts on kitchen paper and let them drain and cool down.
Once cooled, dust with icing sugar.
