Method
Begin by melting together coconut oil, brown sugar, and golden syrup in a small saucepan.
For a touch of extra flavour, add cinnamon ground and stir until everything is thoroughly combined.
Allow the mixture to cool slightly before proceeding, as this will prevent the chocolate chips from melting.
Once cool, grab a large mixing bowl and combine all the dry ingredients with the cooled mixture.
Use baking paper to line the base of a baking tray.
A 21 cm square baking tin with a removable bottom is ideal for this recipe, though any baking tray will work.
Transfer the muesli bar mixture to the prepared tin and firmly press it down with a spoon or spatula to create an even layer.
Pop it in the fridge to chill for 2 hours.
Once chilled, lift the bars from the tin using the removable bottom (if available) or carefully slide them out onto a chopping board.
