Oriental Spiced Chicken Drumsticks with Rice

Ingredients
- 1kg chicken drumsticks
- 1 broccoli
- 2 red onions
- 300 basmati rice
- a pinch of salt
For marinade
- 2 tbsp honey
- 2 tbsp soy sauce
- 3 tbsp oil
- 2 cm of fresh ginger
- 2 garlic cloves
For garnish
- a few sprigs of green onion
Method

Preheat the oven to 200°C.
Wash the broccoli and cut it into florets.
Peel the red onion and slice it into wedges.
In a small bowl, mix the oil, honey, and soy sauce.

Peel and grate a piece of ginger, then peel and mince the garlic. Add both to the marinade and stir to combine.
Place the chicken drumsticks in a large bowl, pour the marinade over them and coat evenly.

Prepare a roasting tray, add the chicken, pour over any remaining marinade, and roast for 25 minutes, turning the drumsticks halfway through.

After 25 minutes, add the broccoli and onion to the tray and roast for another 25–30 minutes, turning everything halfway, until the chicken is cooked through and everything is golden.

Meanwhile, rinse the rice thoroughly and cook it in lightly salted water according to the package instructions, then drain.
Divide the rice into bowls or plates, then add the chicken drumsticks and vegetables.
Spoon the sauce from the roasting tray over the top.
Slice some sprigs of green onions and scatter them over the dish.
