Ingredients

  • 225g Halloumi cheese alternative
  • 110g of Greek-style yoghurt
  • 1 Cucumber
  • pinch of salt
  • pinch of black pepper
  • 1 tsp of lemon juice
  • 150g Couscous
  • 1 heaped tsp of butter
  • 50g of raisins
  • a handful of dill (fresh or frozen)

Method

Peel the cucumber and grate it on a large-mesh grater. Strain the juice and add Greek yoghurt, salt, pepper and lemon juice. Mix well, then add dill. Make a final stir.

Slice the halloumi cheese and place it in a frying pan lightly greased with oil. Fry for a few minutes on each side until crispy and brown outside.

Place couscous in a heatproof bowl. Add raisins, butter, lemon juice, salt and pepper. Add boiling water (4 parts couscous per 5 parts of water). Stir well, then cover and leave for about 8 minutes. Mix halfway through.

Put all into a bowl. Sprinkle with a few raisins over couscous for a glamorous look.
