Ingredients
- 4 tomatoes
- 1 small white onion
- a handful of coriander leaves
- 2 tbsp of pickled green slices of jalapeños
- 1 tbsp of olive oil
- ½ lime
- a pinch of salt
- a pinch of black pepper
Method

Wash and dry the tomatoes, then cut them into small cubes with a sharp knife.
Peel the onion and dice it finely.
Chop the coriander and jalapeños.

Place everything in a bowl and mix well.
Add the olive oil and a squeeze of fresh lime juice from half a lime.

Season with salt and pepper.
Mix all together, taste, and adjust the seasonings if needed.
Cover and refrigerate for 30 minutes.
Serve chilled, ideally with tortilla chips on the side.
