Ingredients

  • 400 ml coconut milk
  • 2 ripe bananas
  • 200g ripe and ready-to-eat pineapple
  • 100ml milk
  • 2 tsp maple syrup
  • ½ of a lemon, for juice
  • a pinch of desiccated coconut

200 g of pineapple is approximately half of a fresh pineapple.

Peel and slice the bananas.

Cut off the top and bottom of the pineapple.

Stand it upright and slice off the skin from top to bottom.

Remove any remaining “eyes” with a small knife.

Cut the pineapple in half or into quarters, remove the hard core, and cut it into chunks.

In a blender jug, combine the coconut milk, regular milk, banana slices, pineapple chunks, maple syrup, and a squeeze of lemon juice.

Blend until smooth and creamy.

For an enhanced flavour, refrigerate for at least 30 minutes before serving.

Pour into glasses, sprinkle with desiccated coconut, and serve chilled.

Tips

Instead of maple syrup, you can use honey.
