Ingredients
- 2 apples
- 2 eggs
- 250ml milk, lukewarm
- 250g self-raising flour how to?
- 2 tbsp sugar
- 1 tsp baking powder
- rapeseed oil, for greasing
- icing sugar, for dusting
Method

Peel the apples, remove the seeds, and grate them on a box grater. Set aside.

Crack the eggs into a mixing bowl, add the lukewarm milk, and beat with a hand mixer.
Add the flour, sugar, and baking powder, and mix until the ingredients are well combined.

Stir in the grated apples with a spoon.
In a large skillet, heat some rapeseed oil and reduce the heat to medium.

Spoon or ladle portions of the apple pancake mixture into the skillet and fry until puffed up and golden, about 2 minutes on each side.

The pancakes will absorb the oil, so you may need to add more between batches.
Remove the pancakes from the pan and place them temporarily on a piece of paper towel to absorb any excess oil, then transfer them to a plate.

Sprinkle with icing sugar, and they are ready to serve.
The number of pancakes will depend on the size of the portions. I used a small ladle and made 12 pancakes.
Tips
Lukewarm milk refers to milk that is slightly warm but not hot. It should feel warm to the touch, about the temperature of your skin, usually around 36–40°C. This temperature is often used in recipes to help ingredients like yeast or eggs blend more easily without causing them to cook or react too quickly.
