Ingredients
- 1kg baby potatoes
- 4 gherkins
- a handful of fresh dill
- a handful of fresh parsley
- ½ red onion
- 60g canned sweetcorn
For Dressing
- 2 tbsp mayonnaise
- 1 tbsp olive oil
- 1 tsp English mustard
- 1 tsp honey
- ½ lemon for juice
- salt, for taste
- black pepper, for taste
Method

Start by giving the baby potatoes a good rinse, then chop them into halves or quarters, depending on their size.
Bring a large pan of lightly salted water to a boil. Add the potatoes and cook them until they are tender but not falling apart, about 10-15 minutes.
Drain the potatoes and let them cool slightly by transferring them to a large mixing bowl, which will be used to combine all the ingredients.

While the potatoes are cooling, finely chop the gherkins, dill, and parsley. Peel and finely chop half of the red onion.
Once the potatoes have cooled down a bit, add the chopped gherkins, dill, parsley, and red onion to the mixing bowl.

Drain the canned sweetcorn and add it to the bowl as well.
To prepare the dressing, combine the mayonnaise, olive oil, mustard, honey, and the juice of half a lemon (about 2 tablespoons) in a small bowl.
Use a small sieve while squeezing the lemon to catch any seeds, ensuring a smooth dressing.
Season the dressing with salt and freshly ground black pepper to taste.

Pour the dressing over the potatoes and gently toss all the ingredients together until the potatoes are evenly coated.
