Ingredients
- 250g basmati rice
- 2 tbsp butter
- 1 onion
- 1 red bell pepper
- 2 garlic cloves
- 150g frozen peas
- 2 tbsp curry powder
- 2 tbsp dark soy sauce alternative
- a pinch of black pepper
- a few sprigs of spring onion
Method

First off, cook the basmati rice in lightly salted water, following the instructions on the packet.
Once cooked, drain it thoroughly and make sure it’s completely cool.
For the best outcome, it’s worth using rice that was cooked the previous day – it really does fry up a treat and keeps its texture nicely.
Now, peel and finely chop the onion.
Next, take the red pepper, remove its core and seeds, and dice it.
Then, peel and mince the garlic cloves.
Get a large frying pan or wok and melt the butter over a medium heat.

Tip in the chopped onion and diced pepper and sauté them for a few minutes until they start to soften.
Add the minced garlic and cook until you can smell its lovely aroma.

Stir in the frozen peas and cook everything together for about 4 to 5 minutes, giving it a stir every now and then, until the vegetables are tender.

Sprinkle in the curry powder and mix it in well, letting those spices release their flavour.
Add the cooled rice to the pan, along with a splash of dark soy sauce and a pinch of black pepper.
Stir everything together really well so it’s all combined and heated through.
Have a taste and see if it needs a bit more curry powder or dark soy sauce – add according to what you fancy.

Finally, snip a few sprigs of spring onion for a lovely garnish.

Your simple curry fried rice is ready to tuck into!
