Ingredients
- 200g Halloumi cheese
- ½ long cucumber
- 200g mini tomatoes
- 1 red onion
- 60g Kalamata olives
- a handful of basil leaves
- a few sprigs of fresh parsley
For Dressing
- 3 tbsp olive oil
- 1 tsp honey
- ½ lemon for juice
- ½ tsp of dried oregano
- ½ tsp of chilli flakes
- ½ tsp of dried garlic
- a pinch of salt
- a pinch of black pepper
Method

Wash the cucumber and cut it into pieces.
Wash the cherry tomatoes and slice them in half.
Peel the onion and slice it thinly.
Chop the fresh parsley.
Drain the olives.

In a small bowl, combine the olive oil and honey.

Squeeze in the juice of half a lemon.
Add the seasonings — dried oregano, chilli flakes, garlic, salt and black pepper. Mix well and set aside.

Cut the halloumi into bite-sized cubes. Heat a pan and lightly brush it with olive oil.

Fry the halloumi for a few minutes on each side until golden brown, then remove from the heat.

In a mixing bowl, combine the tomatoes, cucumber, olives, onion, basil leaves and parsley.

Add the halloumi cheese.
Give the dressing a final whisk, pour it into the bowl and toss everything together.

Your salad is ready to serve.
This salad pairs perfectly with crusty bread or pitta bread, and also works well as a side for meat dishes or barbecues.
