- 2 chicken breast
- 120g of grated mozzarella alternative
- 80g of mayonnaise
- a handful of fresh parsley
- salt, for taste
- ground pepper, for taste
- granulated garlic, for taste
- 1 egg
- oil, for greasing a pan

Method
Using a sharp knife, cut the chicken breast into small cubes.
Transfer meat, cheese, chopped parsley, egg and mayonnaise into a large mixing bowl. Stir to combine. Season with a pinch of salt, pepper and garlic. The mixture should be sticky and not too loose.
Cover with a cling film and refrigerate for half an hour.
Heat the oil in a pan over high heat.
Shape the portions with a spoon (or ice cream scoop) and carefully place the mixture in the pan slightly flatten out the tops with the back of your spoon.
Fry each side for 3 to 4 minutes until golden brown and the meat is fully cooked. Add more oil if needed.
If they are browning too fast, reduce the heat.
Cooked, once cut in a half, shall be white and creamy inside.
