nutrition: 217 calories per serving
- 350g self-raising flour
- 175ml warm milk
- 4 tbsp of sugar
- 90g of softened unsalted butter
- 1 tbsp of lemon juice
- 1 tsp of baking powder
- 1 tsp of vanilla extract
- 1 egg
- a handful of sultanas
- Strawberry jam
- softly whipped double cream
Heat the oven to 180C.
Line a baking tray with baking paper.
Sift all dry ingredients and place them in the bowl.
Add soft butter, vanilla extract and lemon juice then pour warm milk.
Using a hand combine all ingredients making a soft dough.1
Do the above steps as quick as possible so the butter doesn’t melt.
If the dough is too sticky add some more flour.
Turn on the floured surface and knead very lightly.
Using a roller makes the 2cm thick dough and cuts your scones with a round cookie cutter.
Place into the lined baking tray.
Beat the egg to make an egg wash and brush your scones on the top.
Bake for around 15 minutes until nicely golden on top.
Enjoy with your favourite jam and whipped cream.
Depending on your preferences, add a handful of sultanas at this stage to make Perfect Irish Scones. ↩︎
