Ingredients

  • 500g lean turkey mince
  • 1 small courgette, 130g
  • 5 mushrooms, 130g
  • 1 egg
  • 50g fine breadcrumbs
  • rapeseed oil, for frying

Seasonings

  • salt
  • black pepper
  • ground paprika
  • chilli powder
  • thyme
  • dried oregano
  • dried rosemary
  • dried garlic

For Dip

  • ⅓ of long cucumber
  • 3 tbsp of Greek yoghurt
  • a pinch of fresh dill
  • salt, for taste
  • black pepper, for taste
  • dried garlic, for taste

Wash and grate the mushrooms using a large-hole grater.

Heat a small pan with a little oil.

Add the mushrooms, season with a pinch of salt, and fry them, stirring occasionally, for about 8-10 minutes until the moisture evaporates. Set aside and allow them to cool.

Wash the courgette and grate it using a large-hole grater.

In a large mixing bowl, combine the turkey mince with a generous pinch of each of the following seasonings: salt, black pepper, ground paprika, chilli powder, thyme, dried oregano, dried rosemary, and dried garlic. Add the egg, grated courgette, and fried mushrooms.

Stir the mixture with a spoon until it becomes smooth and the seasonings are evenly distributed.

Using a spoon, scoop out a portion of the meat mixture and form it into a ball slightly larger than an egg.

I was able to form 10 portions with the given ingredients.

Wet your hands occasionally to prevent the mixture from sticking to them.

Flatten the patties slightly with your hand.

Heat oil in a frying pan over medium-high heat. Place a few patties in the pan and fry for about 5 minutes on each side, until they are fully cooked through.

To check if the patties are cooked, cut one in half and ensure the centre is no longer raw pink.

These patties are delicious when served with potatoes and cucumber salad or dip.

Quick Cucumber Dip Recipe

Grate the cucumber using a box grater.

Finely chop the dill and add it to the grated cucumber.

Add Greek yoghurt, then season with salt, black pepper, and garlic to taste. Mix everything together, and your dip is ready to serve.
