Beef Steak Stir Fry Noodles

Here is my simple beef stir-fry recipe with egg noodles. Inspired by Chinese cuisine, this easy take-out style meal can be made at home for a perfect restaurant-quality dinner for your family.

Ingredients
- 125g of egg noodles
- 1 tsp of sesame oil
- 2 Beef medallion steaks, 340g
- oil, for greasing
- 3 garlic cloves
- 150g of Broccoli
- 1 red onion
- spring onion, for garnish
For beef marinate
- 1 tsp of dark soy sauce alternative
- 1 tsp of sesame oil
- 1 tsp of sugar
- a pinch of baking soda
- 2 tsp of corn starch alternative
- a pinch of chilli powder
For the sauce
- 1 tsp of dried ginger
- 2 tbsp light soy sauce alternative
- 2 tbsp dark soy sauce alternative
- 2 tsp rice vinegar
- 1 tsp of sugar
- 2 tbsp of water
- 1 tsp of chilli powder
- 2 tsp of sweet chilli sauce
Method
Cook the noodles in a pan with boiling water for 4-5 minutes.
Drain and put in cold water.
Put sesame oil and mix thoroughly. Set aside for later.
In a small bowl combine all sauce ingredients (dried ginger, light soy sauce, vinegar, sugar, water, chilli powder and sweet chilli sauce). Set aside.

Wash, drain and cut the beef into fine shreds and marinate with dark soy sauce, sesame oil, sugar, baking soda, corn starch and chilli powder.
Leave to marinate for 15 minutes.
Baking Soda in a marinate will make the meat tender and juicy, not rubbery and stringy.
Heat the oil in a large frying pan or wok. Cut fine garlic cloves and fry them along with marinated beef until browned all over.
Cut broccoli into florets and onion into wedges then add them to your meat.
Stir fry for 10 minutes until broccoli is half-done.
If your beef is too dry, you can a bit more oil or water at this stage.
Give a final whisk to your sauce mixture and add to your beef. Stir well to combine and coat the beef all over.
Add noodles to your beef and warm through constantly stirring.
Put a portion on a plate and sprinkle with spring onion.
Serve and enjoy the taste!
