Cheesy Chicken Bites

Juicy cheese chicken bites are a delicious and easy-to-make appetizer or snack. They are perfect for any occasion and can be served warm or cold.

Ingredients

  • 2 chicken breast 
  • 120g of grated mozzarella alternative
  • 80g of mayonnaise 
  • a handful of fresh parsley 
  • salt, for taste
  • ground pepper, for taste 
  • granulated garlic, for taste 
  • 1 egg
  • oil, for greasing a pan

Method

Using a sharp knife, cut the chicken breast into small cubes.

Transfer meat, cheese, chopped parsley, egg and mayonnaise into a large mixing bowl. Stir to combine. Season with a pinch of salt, pepper and garlic. The mixture should be sticky and not too loose. 

Cover with a cling film and refrigerate for half an hour. 

Heat the oil in a pan over high heat.

Shape the portions with a spoon (or ice cream scoop) and carefully place the mixture in the pan slightly flatten out the tops with the back of your spoon. 

Fry each side for 3 to 4 minutes until golden brown and the meat is fully cooked. Add more oil if needed. 

If they are browning too fast, reduce the heat. 

Cooked, once cut in a half, shall be white and creamy inside.
