Chicken Fajitas

Ingredients
- 2 chicken breasts
- 1 green bell pepper
- 1 red bell pepper
- 1 white onion
- 1 tsp of salt
- 1 tsp of black pepper
- 1 tsp of cumin
- 1 tsp of smoked paprika
- 1 tsp of granulated garlic
- 1 tsp of oregano
- 2 tsp of chilli powder
- 1 tsp of lemon juice
- oil for greasing a pan
- tortilla wraps
Salsa
- 2 tomatoes
- 1 white onion
- salt
- black pepper
- ground paprika
- 1 tbsp of olive oil
- a handful of fresh parsley
Salad
- wild rocket leaves
- cucumber
- red bell peppers
Rice
- 1 cup of rice
- pinch of salt
- 1 tsp of turmeric
Method
Cut chicken breast into fine shreds and marinate with salt, ground pepper, smoked paprika, cumin, chilli powder, garlic, oregano and lemon juice. Leave for about 30 minutes.
While the meat is marinating, prepare the vegetables.
Slice the onion and cut both peppers into nice sticks.
Prepare the salsa
Finely chop the onion, fresh parsley and tomatoes into small dice, preferably the same size, and put them into a bowl. Add a tablespoon of olive oil, salt, pepper and ground paprika for taste.
Mix all together and set aside for later.
For a salad, mix wild rocket leaves with chopped cucumber and red bell peppers.
Once the meat is marinated heat the oil in the pan.
Add the chicken and fry over high heat for about 3 minutes, stirring all the time, so that the meat is well-fried on all sides. Add more oil if needed.
Add the vegetables (peppers and onion) and fry stirring still for just a few minutes.
Reduce the heat and add a few tablespoons of water to make it moist.
Cover and simmer further for about 8 minutes.
The meat will be full of flavour and soft, properly combined with the aromas of vegetables.
In the meantime boil the water for the rice.
Cook rice with a pinch of salt and 1 tbsp of turmeric following the instructions on the package.
Once cooked, drain it and set aside.
On the tortilla wrap put a portion of salsa, salad and chicken fajitas. Serve with rice.
Finish with tomato ketchup and garlic sauce or any of your favourite sauces.
