Here is an easy and tasty recipe for homemade spicy mayo. This chili-flavored mayonnaise is a great addition to many dishes, such as sushi, sandwiches, and salads.

Ingredients

  • 3 egg yolks 
  • 1 tbsp mustard 
  • 250 ml oil
  • ½ tsp salt 
  • ½ tsp pepper
  • 1 tsp of ground paprika
  • 1 garlic clove
  • 1 tsp of chopped fresh chilli pepper

Method

Put the yolks into a mixing bowl and add mustard. Using a hand mixer, whisk until combined. 

In a jug blend 2 tbsp of oil, salt, pepper and ground paprika. Peel and mince garlic clove, chop the chilli and add to the rest.

Pour gently into the yolks-mustard mixture and whisk together.

Gradually add the rest of the oil in small batches whisking constantly.

When adding oil, between each batch, make sure that all is well combined and does not clump, as it will become lumpy.

The mixture shall start thickening.

When pouring the last batch of oil taste and adjust seasonings if needed. 

Refrigerate at least for an hour before use.

Keep refrigerated for up to 2 days.
