Ingredients

Marinade

  • ⅓ cup of olive oil
  • 1 tbsp of chopped Fresh Coriander
  • 2 tbsp of lime juice
  • 2 garlic cloves, minced
  • 1 tsp of chilli powder
  • 1 tsp of ground cumin
  • 1 tsp of salt
  • 1 tsp of smoked paprika

Chicken

  • 1kg of chicken drumsticks

Combine all marinade ingredients in the bowl and mix well.

Put your chicken drumstick in a bowl of cold water, wash and drain.

Tip chicken drumsticks into a bowl with marinade and mix until each is coated. 

Cover with cling film and leave for about 30 minutes to inherit the initial taste.

Heat the oven to 180C with a fan.

Line the tray with aluminium foil.

Place the chicken drumsticks into a tray.

Cover with remaining marinade and bake for 45 minutes turning in halfway through.

Serve hot with any side you like.
