Quick Tomato and Herbs Soup

Ingredients
- 1 onion
- 1 spoon of butter
- 2 garlic cloves
- 200g cherry tomatoes
- 200g wine tomatoes
- ½ red bell pepper
- salt, for taste
- black pepper, for taste
- 2 tsp ground paprika
- a handful of fresh basil
- a handful of fresh dill
- 600g of boiling water
- 200g of passata
- 1 vegetable stock cube
Method
Finely chop the onion and crush the garlic.
Finely chop the cherry and vine tomatoes.
Core the red bell peppers and cut them into pieces.
Finely chop the fresh basil and dill.
Heat the butter in a saucepan and add the onion. Cook for a while, stirring.
Then add the garlic and cook until fragrant, stirring.

Add the tomatoes and red pepper, and simmer for a few minutes, stirring from time to time.
Season with salt, pepper, and ground paprika. Add the basil and dill.
Pour boiling water into the pan.
Add the passata and a crumbled vegetable stock cube.

Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes.
Remove from the heat and let it stand for a few minutes.
Using a hand blender, blend the soup to a fine, smooth texture, or as you desire.
Serve hot with crusty croutons or toasted bread.

To add a bit of flavour and make it more visually appealing, decorate with dill.
