Smoked Salmon Salad

Ingredients
- 185g hot smoked salmon fillets, 2 fillets
- 60g wild rocket leaves
- 140g cherry tomatoes
- 1 medium avocado
- 60g drained sweetcorn
- 1 red onion
- 20g sunflower seeds
- ½ lemon for juice
- 2 tbsp olive oil
- a pinch of fresh dill
- a pinch of salt
- a pinch of black pepper
Method
Cut the avocado in half, deseed, scoop out from the skin and slice.
Halve the tomatoes, peel and slice the onion.
Remove the skin from the salmon and cut it into thin pieces.
Place wild rocket into a large mixing bowl. Add sweetcorn, tomatoes, onion, avocado and salmon.
Pour olive oil and squeeze lemon.
Season with salt and pepper and mix gently all together.
Arrange the salad into two plates.
Top with sunflower seeds and dill sprigs.
Serve with fresh bread or baguette.
