Ingredients
- 500g beef mince
- 1 tbsp of oil
- ¼ cup of water
- 1 tbsp of tomato paste
- 2 tbsp of our homemade taco seasonings
- 10 mini tortilla wraps
- 1 avocado
- 1 red onion
- 1 tomato
- ¼ iceberg lettuce
- 60g cheddar cheese
- 1 lime
- a handful of fresh coriander
Method
Prepare the Ingredients

Cut the lime into four equal parts.
Finely chop the tomato and red onion.
Grate the cheddar cheese.
Peel, deseed, and mash the avocado. Season the avocado with a pinch of salt and lime juice from 1/4 of the lime.
Shred the lettuce and chop the coriander. Set aside.
Cook the Mince
Heat oil in a large frying pan over medium-high heat.

Add the beef mince and fry, stirring frequently, until browned all over (4-5 minutes).

Sprinkle in the taco seasoning, stirring well to coat the mince evenly.

Add tomato paste and 1/4 cup of water, mixing thoroughly. Let it simmer for 5 minutes, stirring occasionally, until the mince is tender and fragrant. Remove from heat and cover to keep warm.
Toast the Wraps
Heat a flat frying pan or griddle over medium heat.

Toast each mini wrap for 30-40 seconds on each side, or until slightly crispy and warm. Stack them in a clean kitchen towel to keep warm.
Assemble the Mini Wraps

Lay each mini wrap flat and add a portion of the cooked mince.
Sprinkle grated cheese over the warm mince to allow it to melt slightly.
Add shredded lettuce, chopped tomato, and red onion.
Top with a spoonful of the mashed avocado and a sprinkle of chopped coriander.
Squeeze a wedge of lime over the filling for a fresh, zesty kick.
Serve Immediately
