Easy Pork & Mushrooms Pasta
This simple pork and mushroom pasta recipe is ready in just 25 minutes and is perfect for a quick and easy weeknight meal. It is also affordable and can be easily adapted to your family's taste preferences

Ingredients
- 600g pork minced meat, 15% fat
- 200g mushrooms
- 1 onion
- 2 garlic cloves
- a handful of fresh parsley
- 1 tbsp oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 500ml tomato passata
- 200g dried Vesuvio pasta
Method

Peel the onion and chop it into small pieces.
Slice mushrooms and mince garlic.
Chop fresh parsley leaving some for decoration.
Heat the oil in the large non-stick pan and fry the minced meat over high heat for around 5 minutes until browned stirring constantly.

Add onion and garlic and cook further for a few minutes until fragrant.

Add sliced mushrooms and continue to fry over high heat for about 8 minutes, stirring occasionally.

Season with salt, black pepper and paprika.

Pour in the tomato passata and bring to a boil.
Cover with a lid and simmer for 10 minutes stirring occasionally.
Taste and adjust seasonings.

Add chopped parsley and stir through.
Boil water for pasta.
Add Vesuvio pasta to the water with a pinch of salt and cook following the instructions on the package.
You can use any type of pasta but I like Vesuvio for its curly shape.
When the pasta is ready, drain and add to the sauce.

Mix all together and serve.
Decorate with fresh parsley.
