For the cake
- 4 eggs, at room temperature
- 180g sugar
- ½ of small orange
- 180g of butter, at room temperature
- 170g of self-raising flour how to?
- 30g potato starch alternative
- 1 tsp of baking powder
- 300g summer fruits, frozen or fresh
- 130g of sugar
- 130g of butter, cold from fridge
- 220g of plain flour
- 1 tbsp of icing sugar, for dusting how to?
Preheat the oven to 180 degrees Celsius with the fan on.
Line a baking tray (24 x 35 centimetres) with baking parchment.
Crack the eggs into a mixing bowl.
Use a hand mixer to beat the eggs on medium speed for 1 minute, or until they are light and fluffy.
Cut an orange in half and squeeze the juice into a small bowl.
Add the orange juice to the dough.
Gradually add the sugar to the dough and mix until the sugar dissolves.
Add the butter to the dough and mix until it is well combined.
Sift the flour, baking powder, and potato starch together into a separate bowl.
Add the dry ingredients to the wet ingredients and mix until just combined. Do not over-mix.
Potato flour helps keep dough fluffy, moist, and fresh.
Whisk the mixture until it is smooth. This may take a minute or two.
Spread the dough into the prepared baking tray.

Combine the sugar, butter and flour in a medium bowl.
Rub the butter into the dry ingredients with your fingertips until the mixture resembles coarse crumbs.
Work quickly so that the butter doesn’t melt.
Spread the fruits over the dough in the baking tray, then sprinkle the crumble evenly on top.
