Ingredients
- 2 boneless, skinless, chicken breasts, approx. 420g
- 4 tbsp tomato purée
- 3 garlic cloves
- 1 tsp dried oregano
- salt for taste
- black pepper for taste
- 1 tsp of butter
- 30 g fresh basil and some more for garnish
- 1 tbsp olive oil
- 200ml water

Method
All ingredients are laid out on the tabletop, ready to prepare Tomato and Basil Chicken
Cut the chicken into bite-sized cubes, peel and grate the garlic cloves, and chop the basil leaves.

In a large frying pan, heat the olive oil and add the chicken.
Fry the chicken breasts in a pan
Fry for 5-6 minutes or until cooked through.

Add the garlic and seasonings (oregano, salt, and pepper). Mix well and fry for another minute or two until fragrant.

Stir in 4 tablespoons of tomato purée and 200ml of water. Mix well and bring to a boil, then simmer over medium-high heat for about 10 minutes.

Finally, add the chopped basil and 1 teaspoon of butter, and cook for another minute or two.

If the sauce is too thin, add 1 teaspoon of cornflour and mix well while simmering. If the sauce is already at the desired consistency, you can skip this step.
Serve hot with rice, or mix with cooked pasta before serving.
