Just Perfect Vegetable Paella

Ingredients
- 200g cherry tomatoes
- 1 red bell pepper
- 1 red onion
- 2 garlic cloves
- 2 tbsp of olive oil
- 100g frozen peas
- 1 tsp saffron
- 1 tsp cayenne pepper
- 2 tsp ground paprika
- 1 lemon, for juice
- 350g paella rice
- 1 vegetable stock
- a pinch salt
- a pinch of black pepper
- a handful of fresh parsley
For vegetable stock you can use 2 vegetable stock cubes dissolved in 1l of hot water.
Method

Cut the tomatoes in half.
Finely chop the red pepper, peel and chop the onion, and mince the garlic.

Heat olive oil in a wide, shallow pan (a large skillet), then start frying the onion.
After a while, add the garlic and fry until soft and fragrant, about 4 minutes.

Add the tomatoes, red pepper, frozen peas, saffron, cayenne pepper, and ground paprika. Squeeze some juice from half a lemon (leave some for squeezing later), and keep the other half for later.

Fry over medium-high heat, stirring until the vegetables soften, for 6-8 minutes.

Add the rice, mix everything together, then pour in the stock.

Cover and bring to a boil, then reduce the heat and simmer for approximately 25 minutes, or until the rice softens, stirring occasionally.

Taste and adjust the seasoning with salt and pepper if needed.
In the meantime, slice the other half of the lemon and chop the parsley.

Once your paella is cooked, leave it to rest for a few minutes, covered, then squeeze the rest of the juice from the first half of the lemon you used before. Sprinkle your dish with parsley and decorate it with lemon slices.
