Crispy Cookies with Jam

Ingredients
- 150g of vanilla Kvarg
- 200g butter
- 300g flour
- 1 tsp vanilla extract
- 1 tsp baking powder
- thick jam (120g)
- icing sugar, for dusting
You can substitute vanilla Kvarg with vanilla fromage frais or thick vanilla yoghurt.

Method
Preheat the oven to 180C and prepare the tray lined with baking paper.
Place the Kvarg, flour, baking powder, butter, and vanilla extract into a mixing bowl. Knead with your hands until the mixture is combined and forms a dough. It will be slightly sticky.
You can add more flour to prevent the dough from sticking to your hands.
Divide the dough into two parts.
Put each part on a lightly floured surface and gently roll it out to a thickness of 5mm.
Sprinkle with a little flour as needed to prevent the dough from sticking to the rolling pin.
Cut out your cookies using a round cookie cutter or a small glass with a diameter of approximately 7cm.
Spoon a small amount of jam in the centre of the dough circle. Fold the dough in half to form a crescent shape, gently pressing the edges together to seal, similar to making dumplings.
Place them on a baking tray and bake for 14-15 minutes until risen and nicely golden.
Don’t worry if the jam comes out of the cookies during baking.
Take the cookies out of the oven and let them cool completely. Finish by dusting them with icing sugar on top.
