Strawberry Brownie

Let’s enjoy the strawberry season with my favourite brownie. Quick recipe for a perfect brownie. Just whisk it all together and put it in the oven!

Ingredients #

  • 5 eggs
  • 180g of sugar 
  • 240g of butter
  • 1 tsp of vanilla extract 
  • 85g of self-raising flour
  • 100g cocoa powder
  • 100g dark cooking chocolate, chopped 
  • 100g strawberry preserve (jam)
  • 300g fresh strawberries, halved 
  • icing sugar, for dusting 

Method #

Preheat the oven to 175C.

Line the tray (25/35cm) with baking paper.

Brownie mix in a bowl, chocolate chopped, baking tray lined and strawbery halved

Place the eggs into the mixing bowl and beat them for a while using a hand whisk.

Gradually add sugar and whisk together until sugar is dissolved. 

Melt the butter in the microwave for a minute then add to the egg mixture, and whisk to combine.

Pour vanilla extract.

Add cocoa powder and mix.

Sift the flour into the mixture still whisking. 

Stir in the strawberry preserve and mix until smooth.

Place the dough into the baking tray, scatter over the chopped chocolate and top with the strawberries.

Bake for about 30 to 35 minutes.   Take out from the oven, cool down and dust with icing sugar.
