Honey Chicken Rice Bowl

Ingredients
For Chicken
- 2 chicken breasts, 400g
- 150g basmati rice
- 200g tenderstem broccoli
For Marinade
- 1 tsp ground paprika
- 1 tsp turmeric
- a pinch of salt
- a pinch of black pepper
- ½ lemon for juice
- 1 garlic clove
- 2 tbsp of oil
- 2 tbsp of honey
For Dressing
- ½ lemon for juice
- a pinch of fresh parsley
- 1 tbsp of honey
- 3 tbsp of olive oil
- a pinch of salt
- a pinch of black pepper
In addition to the ingredients listed, you will also need a baking bag and a few slices of lemon and parsley leaves for garnish.
Method
Preheat the oven to 180 degrees Celsius. Prepare a baking tray by lining it with aluminium foil.
Wash and clean the chicken breasts.
In a bowl, combine the ground paprika, turmeric, salt, black pepper, lemon juice, oil, and honey. Finely grind the garlic clove and add it to the bowl. Mix all of the ingredients together.
Place the chicken breasts in the bowl and gently coat them with the marinade.
Place the chicken breasts and any remaining marinade in a baking bag. Seal the bag tightly.
Place the baking bag on the prepared baking tray and transfer it to the oven.
Bake for 30 minutes, turning the bag halfway through.
While the chicken is cooking, let’s prepare the dressing.
To make the dressing, combine the lemon juice, fresh parsley, honey, olive oil, salt, and black pepper in a blender jug. Blend until smooth. Transfer the dressing to a small bowl and set aside.
Cook the rice according to the package directions, adding a pinch of salt to the water. Once cooked, drain the rice.
Cook the broccoli in a small saucepan of boiling water. Once the water is boiling, add a pinch of salt and the broccoli. Cook for 3 to 4 minutes, or until the broccoli is tender but not overcooked. Drain the broccoli and set aside.
When the chicken is cooked, remove it from the oven, open the bag, and transfer the chicken to a cutting board. Cut the chicken into 1 cm thick slices.
To put together the dish, place a portion of rice on a plate. Top with the broccoli and chicken slices. Drizzle with the dressing and serve.
Tips
You need to time the preparation so that the rice and broccoli are cooked and hot when you remove the chicken from the oven.
