Chicken & Pineapple Fried Rice

Ingredients
- 300g chicken breast
- 200g long-grain rice
- 100g frozen peas
- 200g tinned pineapple
- 1 red onion
- 2-3 garlic cloves
- 1 tbsp olive oil
- 3 tbsp dark soy sauce
- 50ml of water
- 15g fresh coriander
- salt, for taste
- black pepper, for taste
Method
Cook rice with a pinch of salt according to the package instructions. Drain and set aside.
Peel and cut the onion into wedges. Chop the garlic and coriander. Drain the pineapple slices and cut them into chunks. Wash the chicken breasts and cut them into pieces.
Heat the olive oil in a large frying pan over a medium-high heat. Sauté1 the onion for 2 minutes, stirring occasionally, until softened. Remove from the pan and set aside.
Sauté1 the chicken breast pieces for about 5 minutes, or until cooked through and browned. Add the chopped garlic and season with salt and pepper.
Stir in the rice, water, onion, frozen peas, and pineapple chunks. Cook for a few minutes, or until the peas are cooked through.
Heat through until sizzling, then pour in the soy sauce.
Just before serving, stir in the chopped coriander.
