Potato Salad

Here is a traditional Eastern European potato salad recipe that is a favorite in Poland. It is a simple but delicious dish that can be served as a side or as a snack.

Ingredients
- 4 eggs
- 5 medium potatoes
- 4 gherkins
- a handful of fresh dill
- 175g (1 tin) of garden peas in water
- 100g of mayonnaise
- 1 tsp mustard
- salt, for taste
- black pepper, for taste
Method
Put the eggs into a small pan with cold water.
Cover the pan and bring it to a boil. Remove the lid and turn the heat down so the surface barely shivers. Cook for 8 to 10 minutes.
Drain and cool the eggs under running cold water (or in a large bowl of cold water).
Rinse potatoes but do not peel them. Cook whole potatoes in boiled water for about 30 minutes or until tender. Drain and cool them completely.
When eggs and potatoes are fully cooled down, peel them then cut them all into medium dice and put them in a bowl.
Drain garden peas, cut and chop fresh dill and cut gherkins into small dice.
Place all into a bowl and season with salt and pepper. Add dill as a last and stir gently.
Mix mayonnaise and mustard together then add to salad and stir gently to combine all.
Keep refrigerated until served.
Taste good with a piece of fresh bread.
