Simple Chocolate Sponge Cake

Ingredients
- 4 eggs
- 220g sugar
- 220g butter
- 200g self-raising flour how to?
- 50g of cocoa powder
- 1 tsp of baking powder
- 2 apples
- icing sugar how to?
Method
Preheat the oven to 180C with a fan.
Prepare the tray and line it with baking paper.
I used a round tray with a diameter 28 cm
Place the eggs into the mixing bowl and mix using a hand mixer for 2 minutes until light and fluffy.
Gradually add sugar and continue mixing until sugar dissolves.
Add butter and mix further until all ingredients are well combined.
Sift the flour with cocoa powder and baking powder and add to the mixture.
Whisk for a minute or two. Do not over-mix.
Pour the mixture into a baking tray.
Wash and peel apples and cut them into thirds or quarters around the core. Then for smaller slices.
Put the apples on the dough in the pattern you like.
Bake for 45 minutes until a skewer inserted into the centre comes out clean.
Throughout the baking, after around 35 minutes reduce the heat to 170C and carry the baking till the end.
After removing it from the oven leave cake to cool down. Once fully cooled down dust with icing sugar.
