Crispy Chicken Goujons Wraps

Ingredients #

  • 3 chicken breasts
  • A bowl of bread crumbs, approx. 200g
  • 2 eggs
  • 50ml of milk
  • oil, for frying
  • salt, for taste
  • black pepper, for taste
  • cajun seasoning, for taste
  • ground paprika, for taste

Vegetables  #

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 white onion
  • salt, for taste
  • black pepper, for taste

Red Cabbage Salad #

  • 1 small red cabbage
  • 1 tbsp of lemon juice 
  • 1 tbsp of olive oil 
  • 1 tbsp of sugar 
  • Salt, for taste
  • black pepper, for taste

Red Hot Sauce #

  • 150g of tomato ketchup 
  • 2 tbsp of maple syrup 
  • chilli powder, for taste 

Additionally, you will need: #

  • 1 pack of tortilla wraps, 8pcs
  • Garlic sauce
  • A bowl of wild rocket leaves 

Method #

Cut chicken breast into goujons (strips) shape and marinate with salt, pepper, cajun seasoning and ground paprika. Cover with a cling film and leave for about 10 minutes.

Prepare your red cabbage Quarter, core and shred the cabbage. Add salt and pepper, lemon juice, sugar and olive oil and mix throughout. Set aside.

Prepare vegetables Grease the frying pan with oil.

Cut onion into wedges and pepper into sticks.  Add the onion and peppers together and season them with a pinch of salt and pepper.

Stir fry over medium-high heat until the vegetables are half-done. Place them into a bowl then set them aside. 

Red hot sauce In the small bowl combine ketchup, maple syrup and chilli powder. Set aside.

Everyone has a different level of spiciness, add as much chilli as you need. 

Marinated chicken, whisped eggs and breadcrumbs

Going back to the chicken In a small bowl whisk eggs with milk.

Dip chicken strips into the egg mixture and then into a bowl with breadcrumbs. Coat with crumbs nicely on all sides. 

In a pan heat the oil over medium-high heat.

Add a pinch of salt to the oil to avoid an oil splash. 

Fry chicken on both sides until golden brown (around 2 minutes on each side).

Let’s prepare our wraps Put a tortilla wrap on a plate (2 wraps per person). Put a portion of wild rocket leaves, red cabbage, some fried peppers and onions and put the chicken goujons on top.

Finish with red sauce and garlic sauce.
