Simple Poppy Seed Loaf Cake

This moist and poppy seed-rich loaf cake is now my family's favourite! It's easy to make, and adding poppy seeds enhances its flavour and appearance. Poppy seeds are also highly nutritious, providing fibre, manganese, and healthy fats.

Ingredients
- 200g self-raising flour how to?
- 200g butter
- 200g sugar
- 4 eggs
- 1 tsp of baking powder
- ½ lemon for juice
- 50g poppy seeds
Method
Set the oven to 165 degrees Celsius with the fan on.
Grease and flour a loaf tray, or line it with parchment paper.
Beat the eggs in a mixing bowl with a hand mixer for 2 minutes, or until light and fluffy.
Add sugar gradually, mixing until dissolved.
Add the lemon juice and butter to the dough and mix until everything is well combined.
Sift the flour and baking powder together, then add to the mixture and mix until combined.
Add poppy seeds and whisk until combined. Do not over-mix.
Pour the dough into the prepared baking tray and spread it out evenly.
Bake for about 60 minutes, or until a toothpick inserted into the centre of the cake comes out clean.
Sprinkle the cake with icing sugar to enhance the flavour.
