Spiced Apple Sponge Cake

- 4 eggs, at room temperature
- 200g sugar
- 200g soft butter, at room temperature
- 200g self-raising flour how to?
- 1 tsp of baking powder
- 1 tsp of vanilla extract
- 3 red apples, medium
- 1 tsp of ground cinnamon

Preheat the oven to 180 degrees Celsius (fan assisted). Grease and line a baking tray (24x35cm) with baking paper.
Crack the eggs into a large mixing bowl and beat with a hand mixer on medium speed for 2 minutes or until light and fluffy.
Gradually add the sugar while continuing to beat, until the sugar is dissolved and the mixture is thick and pale.
Add the butter and vanilla extract, and mix until well combined.
Sift the flour and baking powder together, and add to the mixture.
Whisk further for a minute or two.
Pour the batter into the prepared baking tray.
Wash and peel the apples, then cut them into small slices. Place the slices in a bowl and sprinkle with ground cinnamon. Toss to coat evenly.
Place the apples on the dough and spread them out evenly with a spoon.
Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the centre comes out clean.
After removing it from the oven, let the cake cool completely.
Serve with a dollop of squirt cream and a sprinkle of cinnamon. Enjoy!
