Couscous & Chickpeas Salad

Ingredients
- 100g couscous
- 200g of plum tomatoes, quartered
- 30g pumpkin seeds
- 50g raisins
- 50g baby leaf and herb salad
- 1 tin of Chickpeas in water, drained
- 2 tbsp of chilli-infused olive oil
- 1 tsp of cajun seasoning
- 1 tsp of butter
- salt, for taste
- black pepper, for taste
Method
Place couscous in a heatproof bowl. Add cajun and butter.
Pour boiling water (4 parts couscous per 5 parts of water), cover and leave for about 8 minutes. Stir well at the beginning and halfway through with a wooden spoon allowing everything to dissolve and combine.
Once done, leave to cool down.
In a meantime prepare all ingredients for a salad.
Once the couscous is cooled, place all salad ingredients into a mixing bowl, and stir gently.
Pour olive oil, season with salt and pepper and your salad is ready!
Keep refrigerated until served.
