Quick Tortellini Salad

- 300g Bacon and Chicken Tortellini
- 80g Salami
- 100g sun-dried tomato Italian antipasti
- 60g Rocket leaves
- 30g Sunflower seeds
- 2 tbsp grated Parmesan
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 4 tbsp olive oil
- pinch of salt
- pinch of black pepper
Bring a pan of water to a boil with a pinch of salt.
Add tortellini and cook according to the instruction on the package.
Drain and set aside.
Chop salami into small slices. Drain and slice sun-dried tomatoes.
In a small bowl mix balsamic vinegar, honey and olive oil until combined well and spiced with salt and pepper.
In a large bowl mix tortellini, rocket leaves, salami and tomatoes.
Pour the dressing, top with sunflower seeds and garnish with parmesan.
Your quick tortellini salad is ready.
