Sweet Chilli Sauce
Be ambitious and make your own homemade sweet chili sauce. This simple recipe is rich in flavor and authentic, making it perfect as an addition to any dish.

Ingredients
- 100g of red chilli peppers
- 2 garlic cloves
- 150g of sugar
- 200ml of water
- 1 tbsp of wine vinegar
- 1 tbsp of maple syrup alternative
- ½ tsp of salt
Method
Combine water and sugar and bring to a boil.
Once the water is boiling, reduce the heat slightly and simmer until the sugar dissolves and the water starts evaporating.

Meanwhile, cut the chilli lengthwise, remove the stalks and chop finely.
Preserve seeds and the tissue that holds seeds in place.
Grate the garlic.
Put chilli and garlic into the pan with boiling sweet water.
Boil for a few minutes then adds salt, vinegar and maple syrup.
Turn on high heat and bring to a boil. Cook like that for a while stirring from time to time.

Reduce the heat and simmer for about 20 minutes until the sauce gets thicker. ⅓ of the water shall evaporate. Remember about stirring.
Check if the sauce can cover the back of the spoon when you dip it in. The sauce will stick to the spoon, but will not be as thick as the final product. The sauce gets, even more, thicker when it is cool down.
Take from the heat and using an electric blender, blend the sauce to the desired consistency.
It doesn’t have to be smooth but if you prefer, do. Be very careful, as the sauce will be very hot, and can reach a temperature way over 100C. Do not try to taste without proper cooling down on a spoon.
Keep refrigerated before serving.
