White Chocolate Muffins

Craving something sweet? Bake up these melt-in-your-mouth white chocolate muffins! Easy, fluffy, and oh-so-delicious!

Ingredients

  • 3 eggs, at room temperature
  • 300g caster sugar
  • 300g soft butter, at room temperature
  • 300g self-raising flour how to?

  • 200ml of milk
  • 1tsp vanilla extract
  • 100g white chocolate chips

For decoration

  • 100g white chocolate, melted
  • 30g white chocolate chips

Method

Preheat the oven to 180C with a fan.

Prepare the muffin tray and cupcake cases.

Place the eggs in the mixing bowl and mix with a hand mixer for 2 minutes until light and fluffy.

Gradually add sugar and continue mixing until sugar dissolves.

Add butter and mix until all ingredients are well combined.

Sift the flour with baking powder and add to the mixture.

Pour milk and vanilla extract. Whisk further for a minute or two.

Fold white chocolate chips into the batter with a spoon.

Fill the bun cases with dough using the same spoon.

Bake for 25 minutes, or until the buns have risen and have a hint of colour on top.

Take them out of the oven and cool them down completely.

Decoration

To decorate, crush the chocolate into a ceramic bowl and melt it in a microwave or hot water bath.

Put the melted chocolate into a piping bag and decorate it however you like!
